Bring to a low boil over medium-high heat, then reduce to a steady simmer and cook uncovered about 25 minutes until the rice is tender, stirring occasionally. 3. Add the raisins and simmer a few more minutes, then turn off the heat and stir in the vanilla. 4. Adjust thickness with more milk or longer simmering. 5. Serve in bowls garnished with cinnamon and fresh fruit, warm or chilled.
