Vegan Breakfast Burritos
Breakfast burritos stuffed with roasted potatoes, beans, sauteed veggies, avocado, and cashew sauce.

01Preheat the oven to 400 degrees F (200 degrees C) and line a baking sheet. 2. Chop the potatoes into 1-inch cubes, toss with the oil and spices, and bake about 30 minutes until golden brown. 3. Whisk all cashew sauce ingredients in a small bowl until smooth. 4. Chop the mushrooms, onion, garlic, tomatoes, pepper, avocado, and red cabbage. 5. Heat oil in a skillet, cook the onion, mushrooms, and pepper 5 minutes, then add the spices, garlic, and tomatoes and cook 1-2 minutes more. 6. Toast a tortilla and fill with the veggie mixture, beans, roasted potatoes, avocado, red cabbage, and cashew sauce. 7. Roll up the burritos and toast them in a pan a few minutes until crunchy and golden brown.
