Danish Pastry (Dessert)
Vegan puff pastry danishes filled with coconut custard and topped with blueberries.

01Bring the canned coconut milk to a simmer in a medium saucepan. 2. Whisk the water, cornstarch, and turmeric until lump-free, then pour into the saucepan, stirring constantly. 3. Add the sugar and vanilla, simmer 30-60 seconds while stirring, then set aside covered with plastic wrap. 4. Preheat the oven to 425 degrees F (220 degrees C) and line a baking sheet. 5. Cut the thawed puff pastry into 6 squares and fold the corners of each toward the center, pressing firmly. 6. Brush with a little plant milk, place about a tablespoon of custard in each center, and optionally add jam and a sprinkle of sugar. 7. Bake on the lowest rack about 17 minutes until golden brown, cool, and top with blueberries.
