Vegan Baked Oatmeal (Breakfast)
Baked oatmeal with mashed banana, peanut butter, chia, and warm spices.

01Preheat the oven to 350 degrees F (180 degrees C) and grease a 6x9 inch baking pan. 2. Mash the bananas in a large bowl, then mix in the peanut butter, maple syrup, and vanilla. 3. Gradually whisk in the plant-based milk, then whisk in the ground chia seeds. 4. Stir in the spices, baking powder, and salt, then add the oats in batches along with optional nuts or seeds. 5. Pour into the pan, optionally top with sliced banana, and bake 35-40 minutes until set and golden brown. 6. Cool briefly and serve warm with peanut butter or maple syrup.
