Red Lentil Waffles (Breakfast)
Gluten-free waffles made from blended soaked red lentils and dates.

01Rinse the red lentils until the water runs almost clear, then soak in plenty of water for at least 2-3 hours. 2. Drain, rinse, and drain again. 3. Blend the lentils with the remaining ingredients until smooth like thick pancake batter. 4. Let the batter rest while preheating a lightly greased waffle maker. 5. Pour batter to cover three-quarters of the surface and cook until golden brown and crisp. 6. Cool on a wire rack, repeat with remaining batter, and serve with toppings.
