  • 1 cup โ€” couscous • 1/2 vegetable bouillon cube, crumbled • 1 cup boiling water • 1 cup cherry tomatoes, halved • 1/2 cucumber, diced • 1/3 cup kalamata olives, sliced • 3.2 oz vegan feta, cubed or crumbled • 3/4 cup cooked brown lentils • 1/4 cup vegan green pesto • 1/4 cup fresh basil leaves • 3 tbsp fresh mint leaves • 3 tbsp fresh parsley
