Massaged Umami Kale Salad

Wash and thoroughly dry the kale, then remove stems and chop into bite-size pieces.

Ingredients (for 4 servings)

  • 1 whole โ€” Kale Salad
  • 6 cups โ€” kale, chopped and stems removed • 2 tsp toasted sesame oil • 1/4 cup dried cranberries • 3 tbsp roasted pumpkin seeds • 3 tbsp sliced almonds, toasted
  • 1 whole โ€” Umami Dressing
  • 1 whole โ€” small shallot, finely minced • 1 garlic clove, crushed • Juice of 1/2 lemon • 2 tbsp sesame paste (or tahini) • 1 tbsp reduced-sodium soy sauce • 1/2 tbsp maple syrup • 1/2 tbsp rice vinegar • 1/2 tsp white miso paste • Pinch black pepper
