Add the lentils and amaranth to a saucepan and cover with water.

  • 1 cup โ€” dry red lentils • 1/2 cup dry amaranth • 1 small onion, finely diced • 1/2 cup fresh parsley, chopped • 4 tbsp nutritional yeast • 1/2 cup whole wheat breadcrumbs • 2 tbsp psyllium husk powder • 1/4 cup sliced black olives • 1/2 tsp salt • 1/4 tsp black pepper
