Preheat an outdoor grill or grill pan to medium-high heat.

Ingredients (for 4 servings)

  • 1 whole โ€” Grilled Zucchini
  • 3 whole โ€” medium zucchini, sliced lengthwise into planks • 1 tbsp olive oil • 1/2 tsp salt • 1/4 tsp black pepper
  • 1 whole โ€” Mint Pesto
  • 1 cup โ€” fresh mint leaves, packed • 1/4 cup fresh basil leaves • 1/4 cup toasted pine nuts or walnuts • 1 garlic clove • 2 tbsp lemon juice • 3 tbsp olive oil • 2 tbsp nutritional yeast • 1/4 tsp salt • 2 to 4 tbsp water, as needed
