Prepare the lentil mixture- In a medium bowl, combine the cooked lentils, chopped walnuts, sunflower seeds, olive oil, and seasoning mix.

Ingredients (for 4 servings)

  • 1 whole โ€” ½ cooked brown lentils
  • ½ cup โ€” raw walnuts, chopped
  • ¼ cup โ€” roasted sunflower seeds, roughly chopped
  • 1 tsp โ€” extra-virgin olive oil
  • 1 tbsp โ€” Homemade Seasoning Mix (refer to tula recipe)
  • 1 whole โ€” Salad Base
  • 4 cups โ€” romaine lettuce, chopped
  • 1 whole โ€” medium tomato, diced
  • 1 whole โ€” medium bell pepper, diced
  • ½ whole โ€” cucumber, diced
  • ½ cup โ€” canned corn, drained
  • ¼ cup โ€” black olives, sliced
  • 1 whole โ€” Cashew Lime Cream
  • ½ cup โ€” raw cashews
  • ⅓ cup โ€” boiling water
  • 1 whole โ€” lime, juiced
  • 1 whole โ€” Guacamole
  • 2 whole โ€” avocados, chopped
  • 1 whole โ€” lime, juiced
  • 3 whole โ€” garlic cloves, crushed
  • ½ whole โ€” small red onion, diced
  • 1 tsp โ€” ground cumin
  • ½ tsp โ€” salt
