Preheat the oven to 425°F.

Ingredients (for 4 servings)

  • 3 whole โ€” green plantains, peeled & cut into 1-inch chunks
  • 3 cloves โ€” garlic, minced
  • 2 tbsp โ€” olive oil, divided
  • ½ cup โ€” low-sodium vegetable or chicken broth, warmed (plus more if needed)
  • 1 whole โ€” Pepper, to taste
  • 2 cups โ€” butternut squash, peeled & cubed
  • 1 whole โ€” medium sweet potato, peeled & cubed
  • 1 whole โ€” large apple, sliced (Honeycrisp or Gala work great)
  • 1 tbsp โ€” olive oil
  • 1 whole โ€” Optional pepper and parsley
