  • 1 whole โ€” medium onion, diced
  • 2 cloves โ€” garlic, minced
  • 2 whole โ€” celery stalks, diced
  • 8 oz โ€” cremini mushrooms, sliced
  • 2 whole โ€” medium carrots, diced
  • 1 cup โ€” frozen peas
  • 1 whole โ€” ½ cups of broccoli florets
  • 3 cans โ€” white beans, drained and rinsed
  • 4 cups โ€” vegetable broth, low-sodium
  • 1 cup โ€” full-fat coconut milk
  • 1 tsp โ€” fresh thyme
  • 2 tbsp โ€” fresh parsley
  • ½ tsp โ€” sage
  • 1 whole โ€” Salt and pepper, to taste
