Cook the pasta according to package instructions, reserving ½ cup of the pasta water before draining.

Ingredients (for 3 servings)

  • 6 oz โ€” fettuccine pasta, dry
  • ½ cup โ€” reserved pasta water
  • 2 tbsp โ€” olive oil
  • 2 cloves โ€” garlic, minced
  • 2 cups โ€” fresh spinach
  • 1 whole โ€” block of silken tofu
  • 3 tbsp โ€” nutritional yeast
  • 1 tsp โ€” onion powder
  • ½ whole โ€” lemon, juiced
  • 1 whole โ€” Salt and black pepper, to taste
