Add rinsed quinoa, water, and bouillon powder to a saucepan; bring to a boil, then cover and simmer on low about 15 minutes until the water is absorbed, then cool.

  • 1 cup โ€” Water
  • ½ tbsp โ€” Veggie Bouillon Powder
  • 1 whole โ€” Cucumber
  • 1 whole โ€” Red Onion
  • 1 whole โ€” Pepper
  • 2 whole โ€” Tomatoes
  • 1 whole โ€” Zucchini
  • ¾ cup โ€” Canned Chickpeas
  • 1 batch โ€” Lemon Vinaigrette
