  • 1 can โ€” chickpeas
  • 1½ cup โ€” farro
  • 2 cup โ€” baby spinach or kale leaves
  • 1½ cup โ€” winter squash or sweet potato
  • ½ cup โ€” bell pepper or grape tomatoes
  • ⅓ cup โ€” Apricots
  • ⅓ cup โ€” scallions
